A burner that lights while you hold the knob but goes out when you release it points to a safety part doing its job, or struggling to.
You press the knob, the burner clicks and lights, and then the flame vanishes as soon as you let go. It is frustrating, but it tells you something useful about how the rangetop works.
Gas burners have a flame safety device. Its job is to keep gas flowing only while it senses a flame. When you press the knob, you override it for a few seconds. Releasing the knob lets the safety part take over, and if it does not sense heat, it shuts the gas off.
Never tape down a knob, hold a button with a tool, or find a way to bypass the safety part. That safety is what stops gas from leaking into your kitchen when a flame blows out. Houston storms can also snuff a flame near an open window, so the device matters.
If cleaning does not help, stop using that burner. A technician can test the sensor and valve and replace only what has worn out.
